Halibut with Ginger Tomato Sauce
Serves 4
A quick and easy recipe that pairs mild halibut with a zippy sauce.
Ingredients:
- 4 halibut fillets (about 6 ounces each)
- Kosher salt, to taste
- Pepper, to taste
- 3 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 2 Roma tomatoes, seeded and diced
- 1/4 cup fresh lemon juice
- 4 sprigs cilantro, finely chopped
- 1 tablespoon grated, peeled fresh ginger root
- 3 cloves garlic, minced
Directions:
- Heat olive oil in a large skillet over medium-high heat.
- Pat fish dry with paper towels. Season both sides with salt and pepper.
- Lay halibut in pan, skin-side up. Cook fillets 4 to 5 minutes on each side, until opaque throughout. Remove fish to warm serving platter. Cover and keep warm.
- Add butter, tomato, lemon juice, cilantro, ginger, and garlic to skillet. Simmer 1 minute. Add salt and pepper, to taste.
- Spoon sauce around halibut fillets and serve warm.
